This weeks recipe is: Grandma Jeans Soft Chocolate Cookies.
Makes 2 dozen cookies.
½ cup shorting (I use butter flavor but you don’t have to)
1 cup white sugar
1 tsp vanilla
¾ cup milk
½ cup cocoa
2 cups flour
½ tsp baking soda
½ tsp salt
In a medium mixing bowl cream together shorting and sugar. Then add in 1 shipped egg and 1 tsp vanilla. Next add ¾ cup milk and then add cocoa, flour, baking soda and salt. Mix until dough turn smooth and lump free.
Place the covered bowl in the refrigerator to cool while you preheat oven to 350°
Then drop by small scoop or spoonful onto a nonstick baking mat placed on a baking sheet.
Bake for 10 – 15 minutes. The tops will just lose the wet look when they are finished. If you over bake they will become dry.
Remove from pan, place on cooling rack until cool.
I like to place icing on my cookies and the original recipe calls for icing as well. Most of my children prefer to leave the icing off.
Combine 2 cups powdered sugar and 1 tsp softened butter along with a ½ tsp of vanilla and then slowly add in a tsp of milk at a time until you have the desired consistency you are looking for. The grandchildren like to add sprinkles during the holidays
