Sweet Potato Pie Recipe Tasty Tuesday Linky 11/26

This weeks recipe is: Sweet Potato Pie.

Before I begin I would like to apologize for being absent so much over the past few weeks. I’ve been ill. I promise after the busy holidays I will be far more consistent with our Tasty Tuesday posts. Thank you for your continued support!

Ingredients Pie Filling:

1 and ¼ cups of sugar

½ teaspoon ground cinnamon

½ teaspoon ground nutmeg

1 can (12 oz.) evaporated milk OR half & half (either or)

1 teaspoon vanilla extract

1 and ½ cups mashed cooked sweet potatoes (fresh or caned; I’ll leave the choice up to you)

1 unbaked pie crust (recipe)

Ingredients Pie Topping.

⅓ cup all-purpose flour

⅓ plus 2 Tbsp brown sugar

½ cup chopped pecans

½ cup shredded coconut

⅓ cup butter (room temperature, not melted)

Preheat your oven to 425°. In a mixing bowl; blend together spices and sugar. In a separate small bowl beat your eggs. Now add your beaten eggs and vanilla to your sugar and spice mixture and blend together. Next stir in the sweet potatoes, and beat until smooth. Then pour the pie filling into your prepared unbaked pie crust. Place on a cookie sheet and then place on the center rack of your oven; bake for 15 minutes. Reduce the temperature to 350° and continue baking for and additional 30 minutes.

While your pie is baking, mix the topping ingredients together. Once the pie has baked for 30 minutes at 350°;  remove the pie from the oven and sprinkle the topping mixture over the top of the pie. Some times I will make a circle with the topping other times I sprinkle over the entire pie. Return the pie to the oven and bake for another 10 – 15 minutes at 350°, until the topping is golden brown (the pie will be exactly like a pumpkin pie when you remove it from the oven; it will continue to set up as it cools down). Cool on a wire rack or place on your stove top grate to cool. Store in the refrigerator.

Serve with whipped topping.

I’m sorry however my oven went out, so I do not have a picture. However I’ve made this pie several times for my family and for retail sale. It’s always been a big success.
