This week’s recipe is Slow cooker spicy shredded chicken.
This is perfect for nachos, burritos, tacos and so much more. I also freeze just enough for a single meal in zip bags for a quick beginning to a meal on a busy night. That means the nights I don’t want to cook or I forgot to place meat out to thaw for dinner 😉
Ingredients:
Fresh chicken, I prefer boneless.
1 – can Ro-tel diced tomatoes with chilies.
1 – package of taco seasoning.
I used boneless chicken breast I received from Zaycom foods for review.
First I rinse my chicken breast off and remove any excess fat or skin.
Next I added 4 very large chicken breast (the chicken breast are huge) into my slow cooker which I had sprayed down with cooking spray to help prevent sticking. Yes, my slow cooker is old as dirt so food has a tendency to stick.
Now I pour one can of diced Ro-tel tomatoes with added chilies over the chicken.
Next add one package of taco seasoning.
Now cover and set your slow cooker to high for the first 2 hours. Once the chicken has cooked through, I turn the heat down to medium and each time I open the lid I use 2 forks a pull them away from each other to shred a little more of the chicken as it becomes tender. You can continue to simmer on medium or low until needed. Mine ended up cooking about 4 hours total. And the chicken was melt in your mouth tender.
