Oatmeal Chocolate Chip Cookies Recipe LeahSay's Views

This week’s recipe is Oatmeal Chocolate Chip Cookies.

Ingredients:

3 sticks of butter (equals 1 ½ cups) Soft, but not melted.

2 cups of brown sugar (light or dark)

1 cup of white sugar.

3 eggs.

2 teaspoons baking powder.

1 teaspoon cinnamon.

½ teaspoon nutmeg.

½ teaspoon baking soda.

Pinch of salt.

2 tablespoons vanilla extract.

4 cups quick oats.

3 ¾ cups flour (I’ve used both white and wheat, so whichever your family prefers).

1 ½ cups of chocolate chips (I used milk chocolate)

Preheat oven to 350°

I prefer to bake my cookies on silicone non-stick baking mats or parchment paper, simply because it helps with clean up and the cookies are easier to remove from the pan when transferring to the cooling rack. However, when you do use parchment paper you can hold the hot cookie sheet in your left hand (which is covered with a pot holder); then gently pull the parchment paper off the cookie sheet and onto the cooling rack.

In a large mixing bowl, I use my stand mixer because stirring and mixing by hand isn’t an option with arthritis. I place my softened butter, brown sugar, white sugar and eggs into my mixing bowl, then turn the speed to med-low just until blended well.

Next I raise the mixer arm and add in baking powder, baking soda, salt, cinnamon, nutmeg and vanilla extract, then mix on med-low until blended.

Now it’s time to add in your oatmeal and mix until blended. Then add the flour and mix until blended. Once everything has come together and become happy, toss in the chocolate chips your family prefers and mix on low JUST until blended.

Place on cookie sheet 2″ apart and bake at 350° until light golden color just begins to form around the outer edge of the cookie. If you leave until the top turns golden brown expect hard cookies, which could be great for dipping in a cold glass of milk.

Store in air-tight food storage container and they also freeze well.
