This week’s recipe is Hearty Chili, just in time for tailgate season.
A steaming hot bowl of chili topped off with your favorite toppings such as Frito’s, jalapeños, shredded cheese, sour cream, onion, crackers or cornbread.
Ingredients:
2 – lbs ground beef (or turkey, sausage the ground meat your family prefers).
2 – cans of diced or stewed tomatoes
1 – ro-tel tomato with chills
2 – cans beans (I’ve used kidney or pinto both work fine)
⅔ – cup chili seasoning
2 – Tbsp flour
½ – cup water
Pull your crock pot out and set it to the side. Then grab a skillet and brown and crumble your ground beef. While your meat is cooking, you can start adding ingredients into your crock pot. Open the cans of beans, tomatoes and ro-tel and pour into the crock pot. Then add in your ⅔ cups of chili seasoning. Place 2 – Tbsp of flour in ½ – cup of water and mix until the flour is lump free. Now pour into the crock pot with the beginning of your chili mix. Now your meat should be ready, drain and add in with chili mixture. Stir to combine, place the lid on your crock pot; set the heat to med or high. Once the chili becomes heated through you can then turn the heat down to low and let it simmer as long as you wish. I think it tastes better if you let it cook at least a couple of hours, so I like to start mine in the morning or early afternoon, so it will be ready at dinner time.
