Gorton’s Mediterranean Style Grilled Tilapia Recipe:
6 Gorton’s Signature Grilled Tilapia fillets
1 cup red, roasted canned pepper cut into strips (used fresh peppers that I grilled on the stove top)
1/2 pound pancettia cut into small dice bite size pieces. Pancetta is an Italian bacon made of pork belly meat that is salt cured and spiced with place pepper.*
4 oz kalamata olives chopped or sliced.
1 oz extra virgin olive oil.
1 oz balsamic vinegar.
4 oz feta cheese crumbled.(and yes I did dibble on a few bits while the fish was cooking).
Place pancetta in a small sauce pan along with olive oil. Over medium heat, cook the pancetta until crisp, about 7 minutes, give or take. Add balsamic vinegar, roasted peppers, sliced olives and cook for another 2 minutes, then allow to cool to room temperature.
Prepare Gorton’s Signature Grilled Tilapia fillets accruing to the package directions and then cool slightly.
Place grilled fillets on 6 plates over a hand full of cleaned lettuce (your choice), top with vinaigrette and sprinkle with cheese. Serve immediately.
Dinner in under 30 minutes!

Down Home Ranch Canoes, crisp, light and filling. I really like exchanging the bread with lettuce leaves which still brings a nice crunch and yet cuts back on my carb intake. Yes, I’ll admit it I need a 12 step program for bread. I could easily enjoy bread 3 meals per day and 7 days a week; not an understatement.
Grilled Fillet Pear Salad, they had me hooked at pears and salad. The only thing I’d change about this Gorton’s recipe is the raisins, nope I’n not a fan so I’d substitute nuts.
Greek Fillet Salad! Again a fun, quick and easy recipe that will have dinner on the table in short work.
Grilled Tilapia Broccoli Penne, oh this recipe is calling my name. I LOVE pasta almost as much as I love bread 😉
