I created Gooey Pecan Pie Breakfast Muffins for my brother this week, and he said he actually prefers these over pecan pie now.

Let’s start with a little background… my youngest brother loves pecans, pecan pie, candied pecan, toasted pecans, do you see a pattern forming here. When he finished his first muffin he said it was good. Then he came back for seconds and decide he like the Gooey Pecan Pie Breakfast Muffins better than pecan pie because he can eat them on the go.

The Gooey Pecan Pie Breakfast Muffins are best served warm. They have a warm gooey texture in the center that is a close second to pecan pie, yet a quick and easy to prepare recipe for those lazy weekend breakfast moments.  So, if you have any leftovers just pop them in for a quick reheat.

Pecan Pie Muffins Muffin Breakfast Pecan Holiday Treat Sweet Bread

Ingredients:

1 cup + 2 Tbsp of flour (I’ve used cake flour and all-purpose, the both worked well).

2 cups brown sugar (dark brown sugar will give you the rich color shown in the photos, light brown sugar will be a little lighter in color).

2 cups chopped pecans

4 eggs

3 sticks of butter (I prefer butter over margarine)

Cupcake pan liners

Non-stick cooking spray

Preheat oven to 345-degrees. Place cupcake liners in your muffin pan. This recipe should make 20 muffins the size shown in the photos or a 15 if you add more mix into each muffin liner prior to baking. Once the muffin tins have been lined with cupcake liners spray each liner with non-stick cooking spray (trust me on this one).

In a bowl and in dry ingredients; flour, brown sugar, and pecans and give it a stir. Then add the melted butter, followed by the eggs. Stir until combined and moist. DO NOT over mix.

Pour or spoon your batter into your lined and prepared muffin tins. Not quite 3/4 full of muffins the same size as shown in the photos, or almost full for a larger muffin.

Place in 345-degree oven and set the timer for 20 minutes. You will need to check them for doneness, as everyone’s oven cooks at a different temperature. Some ovens may need to cook for 25 minutes. I pulled mine out when a toothpick inserted into the center came out clean (dry without dough).

Store in an air-tight container.

I’m planning on making the for Christmas morning brunch, placing them in a warming tray so they will be warm when served.
