I Certainly Enjoy A Simple Recipe During A Busy Week Night. This Chicken Fried Rice Recipe Is Twice A Simple Using Leftover Steamed Rice From A Previous Meal.
Previously in the week I created Jerked Chicken Tacos served with Steamed Rice, two days later I served fresh Chicken Fried Rice free of MSG which can cause trouble for many of us.
Chicken Fried Rice Ingredients:
2 cup of prepared rice (I used leftover rice)
2 chicken breasts sliced into bite size pieces and seasoned with salt and pepper (you can substitute shrimp, pork or go meatless)
1 egg
2 Tbsp + 1 teaspoon oil
1-2 Tbsp soy sauce
1/2 cup carrot shredded
1/2 cup frozen peas or mixed vegetables
1 clove garlic (minced)
1 Tbsp water
Dash of sugar
2-3 green onions chopped

Heat a large skillet or wok with 1 Tbsp oil over medium-high heat. Add seasoned bite-sized chicken once pan is heated (do not let the oil begin to smoke). Cook the chicken until cooked completely cooked through, then remove chicken from skillet and set aside.
While the chicken is cooking whisk one egg and 1 teaspoon of oil along with a dash of salt and pepper.
Once the chicken has been removed add the remaining 1 Tbsp of oil into the pan and bring back up to temperature. Add the shredded carrot, peas, or frozen vegetables and stir fry until just before tender (I don’t care for soggy vegetables). Add garlic and cook for another 45 seconds.
Push the vegetable over to one side of the pan to stay warm but not directly over the heat. Add egg and oil mixture and cook until the egg is done.
Add in the cooked chicken and pre-cooked rice (rice works best if room temperature or warmer) along with 1 Tbsp water and 1-2 Tbsp soy sauce (taste preference). Stir until combined and heated through.
Remove from heat and stir in chopped green onion.
Update* I created chicken fried rice once again and this time, I changed up the vegetable to include the vegetable I had on hand. Chicken, jasmine rice, 1/4 red pepper, diced carrot, white onion, edamame, and egg. See photo below.
