This week’s recipe is Chicken and Rice Taco Salad.
Once again I need to apologize for the missing photographs. When we changed the blog over to WordPress not all of the photos made the trip.
Cook and prep time 25 minutes. Ingredients needed:
3-4 cups cooked chopped roasted chicken.
Chopped lettuce, tomato, onion (along with any topping your family prefers for salads).
1 package of Taco Seasoning + 1 cup water.
1 can of Refried Beans + 3 Tbsp water.
1 package of Knorr Fiesta Sides Spanish Rice + 2 cups water and 1 Tbsp oil or butter (I use butter or olive oil).
Shredded cheese, olives, peppers (again any toppings your family enjoys on tacos).
Salsa or taco sauce.
Note* I prepared 2 roasted chickens along with an x-large pork roast at the beginning of the week, which I can make in to quick meals throughout the week.
I shredded enough chicken to have 4 cups; which I place in my non-stick skillet with 1 pkg of taco seasoning and 1 cup of water. I turn the heat on low, cover with a lid and stir occasionally.
Next I opened a can of refried beans which I will place into a saucepan along with 3 Tbsp of water, cover and heat on x-low stirring occasionally.
Open your bag of Spanish rice and pour into a medium size sauce pan and add in 2 cups of water and 1 Tbsp of butter or oil. Give it a stir and cover with a lid over a medium heat. (follow directions on pkg).
Keep and eye on the above items cooking while you pull out the items needed for the toppings. Lettuce, tomato, cheese, olives, onion, salsa, guacamole along with anything else your family enjoys on taco night.
Chop the items needed and then place them in serving dishes. I place ours out buffet style. Allowing each to build their own salad. This helps the children get involved at meal time and almost always means they will clean their plate since they each made the choices for the toppings.
We serve ours with thin style tortilla chips; however I do keep fajita shells on hand because it seems we almost always have on who would like a taco instead. Go figure.
Start out by layering refried beans, chicken and rice on each plate. Then top off with your favorite toppings and enjoy!
This meal worked out perfectly since I had a migraine headache and was not up to pairing a full blown meal.
And yes… she is a big fan of guacamole 😉
