A Backyard BBQ Make Ahead Smokey Chipotle Pasta Salad This Isn’t Your Momma Pasta Salad.
We’ve all enjoyed the standard pasta salad found at most backyard bbq’s, potluck dinners and family gathering featuring the standard pasta, peas, cheese, mayo with maybe a few variations. I decided I wanted a pasta salad with a bolder flavor to match our bacon wrapped grilled jalapeño poppers and steak sliders.
I played around with the sauce (I had 3 bowls of pasta salad sauce working at the same time) until I found just the right combination of creamy, smokey goodness with just a slight bit of heat (you can adjust the heat).
Smokey Chipotle Pasta Salad Ingredients:
1/2 cup diced red onion
3/4 cup sliced black olives
3 hard boiled egged chopped
1 cup of shredded roasted chicken (or omit)
1/2 cup of chopped broccoli or cauliflower
3/4 cup cherry tomatoes sliced in half or quarters
1 cup of grated cheese (shredded tends to become lost in the mix since it is so fine)
3 cups pasta noodles (any shape will work other than flat noodles)
Salt and pepper to taste
I used 2 tbsp Cholula Chipotle Hot Sauce (you can adjust the heat by adding more or less)
1 package of Ranch Dressing DRY MIX
1 cup mayo
1 cup sour cream
1/2 lime juiced
Consider changing up the pasta salad combination.
Try adding black beans, corn and chicken for a different flavor!
Cook the pasta noodle according to directions just until al dente, remember if you overcook the noodle your pasta salad will be mushy. As soon as the pasta is done pour into a colander and rinse under running COLD water to remove the heat and prevent the pasta from becoming overly done.
Slice and chop the veggies.
Combine Ranch Dressing Dry Mix, mayo, sour cream, lime juice, salt, pepper, Cholula chipotle hot sauce. Stir well. Add the chopped a vegetables and stir together, then set aside.
Once the pasta has been rinsed under cold water and drained thoroughly you can add the pasta to the vegetables and the dressing mix in a resealable bowl. Fold the pasta in with the dressing coated vegetables (be gentle to prevent the pasta from falling apart).
Refrigerate until ready to serve. I keep mine in a plastic bowl in the refrigerator and then transfer to a covered dish before serving or transporting, simply because I wanted to show off my pretty casserole set. 😉
