This week’s recipe is Pasta Rigatoni with fresh grated Parmigiano Reggiano, ready in 30 minutes.
1 – box of pasta rigatoni ( I used the Great Value brand)
1 – can of inexpensive pasta sauce ( I dress up an inexpensive can/jar of sauce to save money)
Parmigiano Reggiano ( I had Boni Le Delizie Del Farnese on hand)
Fill a medium to large sauce pan with water and add in a good pinch of sea salt, then bring water to a boil. Once water is boiling add in your box of rigatoni pasta while you stir to prevent sticking together. Reduce heat to medium-high and allow to cook for 10 – 15 minutes until tender but not over cooked.
In a small sauce pan, add your can/jar of sauce you’ve picked up on sale. Next I like to add in a diced clove of garlic simply because I adore garlic. Then toss in a tbsp of Italian seasoning along with a ½ cup of minced onion. Normally I would start out with a skillet and brown a pound of hamburger, then drain. Once that is complete I then add my sauce and the above ingredients. However since I’ve recently had dental work that requires me to be careful I passed on the hamburger tonight.
While your pasta and sauce are cooking, go ahead and grate your Parmigiano Reggiano.
Once your pasta has cooked al dente, drain the water and place in a large serving dish, then add your sauce over the top of your pasta along with your grated cheese.
