There’s something about those chewy peanut butter cookies that have me standing in line with half the mom’s at the mall waiting for a single peanut butter cookie. Yep, I’m cheap so I only purchase one. 😉

Yesterday I had the cooking fever, so I spent half the day in the kitchen baking, cooking dinner, and then the fun part… clean up! I don’t mind the clean up so much as I’m one of those that likes to clean as I go or at least place the used kitchen tools in a sink of hot soapy water to soak so my work will be easier in the end.

The first thing I reach for when I begin baking is my Kitchenaid stand mixer. Let me tell you this little lady has saved my arthritic hands many ah times. I notice over at Amazon Kitchenaid has a fun line of mixers in fun pastel colors to jazz up your kitchen and help you create delightful dishes for your family and friends.

Ingredients:

3/4 C White Sugar

3/4 C Brown Sugar

1/2 C Light Karo Syrup

1 C (2 sticks) Unsalted Butter

1 C Peanut Butter (creamy or chunky your choice)

2 Eggs

2 tsp Vanilla Flavoring

2 tsp Baking Soda

Pinch of salt (1/2 tsp)

3 C All Purpose Flour

Preheat oven to 340-degrees. Place the slightly soft (NOT melted) butter, Karo syrup, white sugar, and brown sugar in the mixing bowl and mix on low until whipped and creamy. Stop the mixer, add in the eggs, vanilla flavoring, baking soda, and a pinch of salt and mix until all is combined. Shut down the mixer and add in ONE cup of flour at a time until all the ingredients are combined well.

You will need a baking sheet  covered with a nonstick baking mat or parchment paper on each cookie sheet to aid in clean up and to help remove the cookies with ease. Using a good quality cookie scoop place your peanut butter cookie dough 3 inches apart on the lined cookie sheet. This next step is entirely up to the individual cook/baker; using a fork gently press your cookie dough to form a crisscross pattern on the top of each cookie, then sprinkle a dash of sugar on the top of each cookie before placing in the preheated 340-degree oven for 10 – 12 minutes. I want to stress this… please keep a close eye on your cookies and note the time… once your first tray of cookies BARELY begins to firm and turn a golden brown around the bottom outer edge remove them from the oven and place the cookies on a cooling rack until completely cooled.
